Recipe: Pea & Pesto Soup

I made this soup yesterday and after the recipe being requested by both Newies and Debs I decided just to blog it. It's super quick, super easy and super tasty!

Pea & Pesto Soup


500gm frozen peas
2 medium potatoes (peeled and cut into cubes)
4 spring onions (trimmed but kept whole)
1 litre of veg or chicken stock
3 tbsp green pesto
Salt & pepper

  1. Tip the peas, whole spring onions, potatoes, stock and seasoning into a large saucepan and bring to the boil then simmer for 10-15 mins, until potatoes are tender.
  2. Discard the spring onions, add the pesto, then blend.
  3. Serve with Creme Fraiche and some crunchy croutons.

I'm doing a goats cheese, walnut and pesto chicken salad tonight with the leftover pesto. I know salads aren't very Autumny but I have a very slinky dress to get into tomorrow night so today is panic detox day. Anyway most people don't go for salads in the colder weather but this is delicious. I will post a pic on Twitter and if anyone wants the recipe then just let me know as it would also be great as a light starter at a dinner party as well.
